Can I get a narrower size than 3/16 to 2 inch?

Ask. The circuit currently separates the full band, and narrower cuts would need a screening pass we have not run or costed. Tell us the cut you need and we will tell you whether it is practical.

Is this a #57 stone?

No, and we will not claim it is. ASTM D448 size numbers describe measured gradations, and no sieve analysis has been run on this material. Anyone offering you a size number without one is guessing.

Why is it black?

The material comes from a mineral melt, and the colour runs through the stone rather than sitting on the surface. It is not dyed or coated.
